Living in Italian: Spicy Nectarine Avocado Salad
Registered Dietitian Fiorella DiCarlo RD, CDN prepares this healthy and seasonal salad packed with antioxidants to fight inflammation in the body and boost your immune system! Choose ripe Stone fruits like nectarines, peaches or apricots, avocado and red onion for a spicy kick!
Stone Fruit (i.e. nectarines, peaches, apricots), cubed
Red Onion, thinly sliced
Mozzarella (or feta, ricotta salata)
Extra Virgin Olive Oil
In a large bowl combine avocado, chopped fruit, red onion and mozzarella. Drizzle some olive oil, squeeze of lemon, and salt to taste. Toss to combine.
Plate salad and garnish with basil and sliced red onion. Serve & enjoy!
