Living in Italian: Citrus Fennel Salad

The aroma of citrus groves fills the air in Southern Italy. From lemons and bergamot oranges of the Amalfi Coast to the famous blood oranges of Sicily, citrus fruits are staples of Italian cuisine. Another staple of Italian food is finocchio, or fennel, is grown throughout the country and common in many Italian dishes. Italians love adding a hint of anise flavor and use the entire fennel, from the delicate fronds to its dried seeds. Pairing the juicy, aromatic tang of citrus fruits with the crunch and bite of fennel, and a touch of bright mint makes this a refreshing salad to transport you the coast of Southern Italy!

Ingredients:

  • 2 red grapefruits, peeled & sliced

  • 2 blood oranges, peeled & sliced

  • 2 oranges, peeled & sliced

  • 1 sprig mint

  • 1 small red onion, thinly sliced

  • 1 small fennel, thinly shaved

  • Pomegranate dressing or Fiorella's Lemon Dressing

Preparation:

  • On platter, layer slices of grapefruit, blood orange, and orange.

  • Top citrus with mint, red onion, and fennel.

  • Drizzle dressing over salad.

  • Serve and enjoy!
