Living in Italian: Stone Fruit Pesto Salad

Italian's are also known for mixing locally sourced and readily available foods from all food groups into a large nutrient-packed salad. Stone fruit is native to Italy, particularly the southern regions such as Naples and Sicily, where streets are lined with cherry, apricot and nectarine trees for residents to pick and eat on the go!
This salad is the perfect, refreshing, summer dish with a sweet and savory flavor profile. An Italian twist to the traditional fruit salad is adding mozzarella and pesto, which means you can serve this as an appetizer or dessert. Ingredients:
Cantaloupe
Apricot
Nectarine
Lemon juice
Extra Virgin Olive Oil
Sea Salt
Red Pepper Flakes
Mozzarella Cheese, diced
Basil
Preparation:
Cut all fruit into approximate 1" chunks. Leave skin on all fruits except for cantaloupe
Place fruit a large bowl and mix together
Drizzle with olive oil and lemon juice to taste
Sprinkle with sea salt and red pepper flakes to taste
Add mozzarella cheese to the bowl and mix all ingredients together
Top with basil and pesto
Serve and enjoy!
