Living in Italian: Strawberry Cilantro Salsa

Living in Italian is all about using fresh seasonal ingredients, especially seasonal fruits and herbs, to elevate your dishes. My favorite way to use fruits is to dice them up with my choice of herb for a rustic salsa or chutney. Salsas and chutneys are so versatile, you'll say goodbye to all the old condiments! This strawberry cilantro salsa is the easiest way to hold onto the flavors of summer. Paired perfectly over any grilled or roasted lean protein (steak, chicken, or even salmon) for a fresh and colorful bite or even to top off your salad and veggies for even more color and nutrients!

 

 

Ingredients

  • 2 cups of strawberries, diced

  • 1/2 red onion, thinly sliced

  • 1/4 cup cilantro, chopped

  • Fresh lime juice (~1 lime)

  • Extra virgin olive oil

  • Sea salt, to taste

Preparation

  • Add diced strawberries, chopped cilantro and sliced red onion in a large bowl. Mix to combine.

  • Squeeze fresh lime juice over top and drizzle olive oil over top. Add sea salt to taste. Toss to combine.

  • Serve immediately or chill in refrigerator until ready to serve!

  • Lime: source of ascorbic acid, or Vitamin C, which is a great antioxidant to protect your body and also works to help your body absorb iron found in food (both from animal sources like chicken, red meats, etc or from plant sources like dark leafy greens, spinach, kale, etc) 

  • Olive oil: a monounsaturated fat, important for heart health, and contains antioxidant benefits
