Healthy Apple Fennel Slaw
I love adding a healthy, Italian twist to classic dishes--this time it's coleslaw! I make a few healthy swaps, starting with the binder, simply using Greek yogurt and avocado instead of mayonnaise for added protein, heart healthy, omega-3 fats & fiber! I also add an Italian/Mediterranean classic, fennel for added crisp bite with the apple and traditional cabbage. A beautifully colorful side dish to lighten any meal and impress any guest at a party!
1 cup cabbage, shredded
1 cup purple cabbage, shredded
1/2 cup fennel, thinly sliced
1 red apple, thinly sliced
1 avocado, halved
1/2 cup 2% Greek yogurt
Juice of 1/2 lemon
Squeeze lemon juice over avocado and apples, to prevent browning
Combine shredded cabbage, fennel and apple in a large bowl.
Scoop out flesh of avocado, yogurt and sea salt into bowl. Mix well with hands (or fork) until all vegetables coated with avocado-yogurt mixture.
Serve & enjoy!
Apple: contain fiber, which lowers cholesterol, helps keep you satisfied and your bowels regular!
Fennel: contains vitamin C, important for building collagen and keeping your skin healthy. It also contains phytonutrients which produce antioxidant benefits
Cabbage: is full of fiber and vitamin K, important for bone health and blood clotting
Avocado: is a rich source of omega-3 fatty acids, a heart healthy fat that helps to minimize bad cholesterol (LDL) and improve the good cholesterol (HDL). The healthy moisturizing effects of this fat prevents premature aging and promotes glowing skin
2% Greek yogurt: provides protein and healthy fat so that you can absorb fat-soluble vitamins, like vitamin D & K in this recipe. It's also a great source of calcium & vitamin D, essential for bone health
