1 large sweet potato, skin on and cut into 1/2 inch rounds
1-2 tbsp. Extra virgin olive oil
Salt, to taste
2 sprigs fresh rosemary, roughly chopped
Preheat the oven to 400° F
Prepare the sweet potatoes and fresh rosemary
Place the sweet potato rounds onto a baking sheet and drizzle on the extra virgin olive oil
Sprinkle on the salt and rosemary and toss lightly so each round is coated evenly
Place the baking sheet in the oven for 15-20 minutes
Serve warm and enjoy!
