Living in Italian: Roasted Grapes with Thyme & Fresh Ricotta Crostini

Grapes are said to be the oldest cultivated fruit in the world. They are referenced in biblical stories, hieroglyphics, and more. The cultivation of grapes began approximately 6000-8000 years ago on a family-grown level in Europe.

 

Grapes are grown in almost every region of the Italy and there are more than one million vineyards under cultivation. It's no surprise that one of the many attractions in Italy are based off of wine tours! Because of this, grapes, especially wine, have become such a significant part of Italian culture. Grapes are a great accent to salads, hors d'oeuvres, or simply enjoyed as a glass of Italian wine!

 

Ingredients:

  • Red grapes

  • Extra Virgin Olive oil

  • Sea salt

  • Thyme

  • Ricotta cheese

  • Crostini (optional)

Preparation:

  • Preheat oven to 350 degrees

  • Lay out grapes onto a oven safe pan. Drizzle with extra virgin olive oil, sea salt, and thyme. Massage ingredients together

  • Roast in oven for 20-25 minutes.

  • Place onto toasted crostini with ricotta cheese

  • Serve and enjoy!
