Living in Italian: Stuffed Red Peppers with Spicy Sausage & Mushrooms
Italians love to make vegetables the stars of their table and they especially love to stuff them! This dish is a crowd favorite for any party and easy to make for a simple dinner for one! This low-carb, paleo diet friendly Italian meal uses lean protein and iron from the turkey sausage, which boosts your metabolism and energy!
Ingredients:
2 links Spicy Turkey Sausage, casing removed
1/2 lb Cremini Mushrooms, chopped
Extra Virgin Olive Oil
1 Egg
2 Bell Peppers
Parmesan cheese, grated
Preparation:
Preheat oven to 350 F. In the meantime, place medium saucepan over medium-high heat.
Crumble spicy sausage into the heated pan, and slowly saute until brown. Then add chopped mushrooms. Add a drizzle of olive oil. Saute for ~3-5 minutes.
Then add egg to saute pan and mix together to bind.
In the meantime, prep bell peppers. Cut tops off peppers, remove ribs and seeds.
In an ovenproof baking dish, drizzle some olive oil on bottom. Place bell peppers in pan and begin to fill with sausage-mushroom mixture until peppers full.
Bake in oven for 20-25 minutes, until bell pepper slightly tender.
Let cool ~10 minutes. Garnish with grated parmesan and enjoy!
