Living in Italian: Stuffed Red Peppers with Spicy Sausage & Mushrooms

Italians love to make vegetables the stars of their table and they especially love to stuff them! This dish is a crowd favorite for any party and easy to make for a simple dinner for one! This low-carb, paleo diet friendly Italian meal uses lean protein and iron from the turkey sausage, which boosts your metabolism and energy!

 

Ingredients:

  • 2 links Spicy Turkey Sausage, casing removed

  • 1/2 lb Cremini Mushrooms, chopped

  • Extra Virgin Olive Oil

  • 1 Egg

  • 2 Bell Peppers

  • Parmesan cheese, grated

 

Preparation:

  • Preheat oven to 350 F. In the meantime, place medium saucepan over medium-high heat. 

  • Crumble spicy sausage into the heated pan, and slowly saute until brown. Then add chopped mushrooms. Add a drizzle of olive oil. Saute for ~3-5 minutes. 

  • Then add egg to saute pan and mix together to bind. 

  • In the meantime, prep bell peppers. Cut tops off peppers, remove ribs and seeds. 

  • In an ovenproof baking dish, drizzle some olive oil on bottom. Place bell peppers in pan and begin to fill with sausage-mushroom mixture until peppers full. 

  • Bake in oven for 20-25 minutes, until bell pepper slightly tender.

  • Let cool ~10 minutes. Garnish with grated parmesan and enjoy!
