Skin Healing Pumpkin Smoothie

Pumpkin (zucca) is used in a variety of ways in Italian cuisine including roasted, pureed, and in soups. One of my best memories is walking through the market in Naples, surrounded by these brightly colored gourds and marveling at how the Italians utilized this sumptuous food. 

To make an incredibly easy and delicious smoothie that can be enjoyed as a filling breakfast or snack, I simply use pureed pumpkin (from a can!) or you can boil your own too! The nutrients in this smoothie work together for a skin healing effect and makes it glow! Your skin will thank you during the cold winter months! 

 

 

Ingredients:

  • 1 cup low fat plain kefir

  • 1/2 large banana

  • 1/3 cup pureed pumpkin

  • 1/2 tsp cinnamon

  • 2 tsp fresh lemon juice

  • 1 Tbsp unsweetened toasted coconut 

  • Ice (optional)

Preparation:

  • Place all ingredients into a blender and blend until smooth

  • Garnish with toasted coconut flakes (optional)

  • Serve and enjoy!

Nutrition RX:

  • Pumpkin: high in vitamin A, which keeps skin firm and healthy, and vitamin C, important for making collagen *Extra tip: snacking on pumpkin or sunflower seeds will give you same effect!

  • Kefir: contains probiotics that help to keep you regular and enhance your immune system

  • Banana: high in fiber to help maintain healthy digestion and potassium for heart and kidney health

  • Cinnamon: helps to reduce inflammation and control blood sugar
