Pork Loin with Apple Fennel Slaw

This dish combines classic Italian ingredients, like pork and fennel, into a simple and elegant dinner. Pork loin is a healthy, lean cut of meat full of protein, and puts a healthy spin on the slaw by using Greek yogurt instead of mayonnaise! Juicy, savory sliced pork paired with slightly sweet, crisp slaw is the absolute perfect combination for this time of year! 

 

Ingredients (pork loin):

  • 1 lb. pork loin

  • 1-2 Tbsp. extra virgin olive oil

  • Juice of 1 small lemon

  • 2 cloves garlic, minced

 

Ingredients (apple fennel slaw):

  • 2 apples, sliced

  • 2 cups red cabbage, shredded

  • 2/3 cup fennel, sliced

  • 1/4 red onion, sliced

  • 1/4 cup 2% Greek yogurt

  • Juice of 1/2 a small lemon

  • 1 Tbsp red wine or apple cider vinegar

  • Sea salt, to taste

 

Preparation (pork loin):

  • Preheat the oven to 375 degrees

  • Cover pork loin with lemon juice and garlic

  • Place skillet with olive oil over medium heat

  • Sear the seasoned pork loin in the skillet on all sides to form a crust

  • Place the pork loin on a baking sheet and finish cooking it in the oven for 25-30 minutes

  • Allow it to rest for 10 minutes

  • Slice into 1-inch thick slices before serving

 

Preparation (apple fennel slaw):

  • Add the apples, fennel, red onion, and red cabbage to a large mixing bowl and toss

  • Add the yogurt, lemon juice, vinegar, and sea salt

  • Combine ingredients together

  • Serve the slaw along side the sliced pork loin and enjoy!
