Mini Stuffed Peppers
Fiorella will show you how to put together a delicious appetizer: a simple twist on the Italian American classic sausage and peppers! The perfect combo of savory, spicy sausage, stuffed into sweet mini tricolor peppers will provide your guests with a great antipasto while socializing and sipping on their favorite cocktails. These mini stuffed peppers will be the star hors d'oeuvres at any dinner party!
Ingredients:
1 Tbsp Extra virgin olive oil
8 Mini tricolor peppers
2 Tbsp Red onion
1/4 lb Spicy Italian sausage or turkey sausage
Salt, to taste
2 sprigs Rosemary for garnish
Preparation:
Preheat the oven to 350F
Place a saucepan over medium heat on a stovetop. Crumble the sausage into the pan cook for 4-5 minutes, stirring occasionally.
Add the red onion and salt and sauté for another 2-3 minutes, then put aside.
Cut the tops off the mini peppers, remove the seeds and white flesh as much as possible
Stuff the peppers with the sausage mixture and place them on a sheet pan
Drizzle with olive oil and bake in the oven for 15-20 minutes
Serve on a platter or wooden board with small forks or toothpicks for your guests. Add the sprigs of rosemary to the platter for garnish
Serve warm and enjoy!
