Mini Stuffed Peppers

Fiorella will show you how to put together a delicious appetizer: a simple twist on the Italian American classic sausage and peppers! The perfect combo of savory, spicy sausage, stuffed into sweet mini tricolor peppers  will provide your guests with a great antipasto while socializing and sipping on their favorite cocktails. These mini stuffed peppers will be the star hors d'oeuvres at any dinner party!

 

Ingredients:

  • 1 Tbsp Extra virgin olive oil 

  • 8 Mini tricolor peppers 

  • 2 Tbsp Red onion 

  • 1/4 lb Spicy Italian sausage or turkey sausage 

  • Salt, to taste

  • 2 sprigs Rosemary for garnish

     

Preparation:

  • Preheat the oven to 350F

  • Place a saucepan over medium heat on a stovetop. Crumble the sausage into the pan cook for 4-5 minutes, stirring occasionally.

  • Add the red onion and salt and sauté for another 2-3 minutes, then put aside.

  • Cut the tops off the mini peppers, remove the seeds and white flesh as much as possible

  • Stuff the peppers with the sausage mixture and place them on a sheet pan

  • Drizzle with olive oil and bake in the oven for 15-20 minutes

  • Serve on a platter or wooden board with small forks or toothpicks for your guests. Add the sprigs of rosemary to the platter for garnish

  • Serve warm and enjoy!
