Living in Italian: Truffle Asparagus & Prosciutto Crostini

The truffle, or tartufo, is an underground mushroom cultivated in the Italian countryside, mainly in Piedmonte and Umbria. Urbani Truffles, leaders in the truffle world since 1852, have been my favorite brand available in the United States. Their truffle oil, which is extracted from the mushroom, is a gourmet ingredient that lends an elegant flavor to cooking. A little goes a long way, and its aroma and rich, earthy undertones pair perfectly with roasted vegetables, raw meat and cheese antipasti. Drizzle truffle oil on any food to create a unique flavor profile that will impress!

 

Ingredients:

  • 1 lb fresh asparagus

  • 2-3 tbsp extra virgin olive oil

  • Sea salt, to taste

  • Urbani Truffle oil, to taste

  • Sliced bread (try rye, sourdough, or fette biscottate)

  • High quality aged prosciutto di parma

  • Parmesan shavings

Preparation:

  • Preheat oven to 400F degrees.

  • Trim ends off the asparagus. Toss with olive oil and sea salt to taste, place on sheet pan. Roast in the oven for about 20 minutes or until fork-tender.

  • Remove asparagus from oven. Drizzle with truffle oil to taste, set aside. *Tip: Serve as a side or continue to prepare crostini by cutting into 2-inch pieces.

  • Prepare crostini: layer a slice of prosciutto on sliced bread, then a few pieces of asparagus.

  • Garnish with parmesan shavings and a drizzle of truffle oil.
