Living in Italian: Roasted Corn & Feta Cheese
An homage to our Greek neighbors, with the king of Greek cheese. Feta's salty taste and firm texture is perfect for this crostini, you can use Ricotta Salata or Mozzarella as well in this recipe. Roasting corn on grill or oven enhances its natural sweet flavor. This crostini is the ultimate showstopper at cocktail parties or on any salumi or cheese board!
Ingredients:
1/2 lb fresh corn
1/2 cup feta cheese
2-3 tbsp olive oil
Sea salt, to taste
Peperoncino (hot pepper flakes)
Parmesan cheese, grated
Sliced bread (try 7 grain or parmesan bread)
Lemon juice
Preparation:
Preheat over to 350F.Cut corn kernels off cob and spread out on baking sheet
Toss with olive oil, sea salt, peperoncino and parmesan cheese. Bake for approximately 20-25 minutes
Remove from oven and mix with crumbled feta
Top with additional peperoncino and lemon juice
Place on top of crostini bread
Serve immediately and enjoy!
