Living in Italian: Healthy Avocado Slaw

Fiorella makes coleslaw with an Italian twist by layering flavors and using fresh ingredients. Healthy swaps using avocado and greek yogurt deliver a probiotic punch! 

 

Ingredients:

  • Cabbage

  • 1 Avocado

  • 1 Lemon

  • 2% Greek Yogurt

  • Sea Salt, to taste

  • Cilantro, to garnish 

Preparation:

  1. Place cabbage in large mixing bowl 

  2. Scrape half of avocado into bowl with cabbage

  3. Scoop a few tablespoons of greek yogurt & juice from 1/2 lemon into bowl

  4. Add salt to taste then mix all ingredients together (we recommend using your hands!) 

  5. Garnish with chopped cilantro and an additional squeeze of lemon juice

  6. Serve immediately or chill until ready to enjoy!

  • Cruciferous vegetables (cabbage, kale, also cauliflower, broccoli, radishes, brussels sprouts)- contain carotenoids which can help prevent cancer and have anti-inflammatory properties.

  • Avocado-- is packed with omega-3 fatty acids and fiber which promote healthy skin, anti-inflammatory benefits, heart and digestive health.

  • Greek yogurt-- contains good bacteria which beneficial for gut health and a great source of calcium and vitamin D for bone health.
