Most people associate the Mediterranean with countries like Italy, Turkey, and Morocco, but many forget the Southern France is heavily influenced by the same flavors and uses traditional heart-healthy ingredients as well--just with a French twist. This Tomato Onion Galette is the perfect example of a French take on the Mediterranean diet. A galette is a rustic, free-form tart that can be made either sweet or savory--sort of the love child of a pizza and a pastry.
Just a few tips to keep in mind: be sure to use a pizza dough made of complex carbohydrates like whole wheat/grain flour, or even buckwheat, instead of refined white flour so you get the additional benefits of fiber, B-vitamins, and healthy fats. Roasting tomatoes before adding to the dough gives them a more succulent, less acidic flavor and makes lycopene (antioxidant!) easier for the body to use.
This vegetarian galette makes a great brunch recipe, and it is a low-stress—yet seriously impressive—option for a busy host, thanks to its rustic, no-frills form.
