Living in Italian: Steak and Spinach Salad
Are you tired, fatigued, need more iron or just love a juicy steak? Iron has many health benefits including boosting your energy, building robust blood cells (and avoiding anemia), enhancing your immune system and optimizing muscle health. Fiorella prepares a meal filled with iron, both in animal and plant form. Steak, or any red meat, is filled with "heme" iron, which is more bioavailable or easily used by your body. "Non-heme" iron, found in dark leafy greens, is less bioavailable, but by adding some vitamin C, like in the form of lemon juice, you can boost your body's ability to use plant-based iron. When you pair steak and spinach, you have an iron-packed meal to boost your energy!
Place a saute pan or cast iron griddle over medium-high heat.
In the meantime, prepare salad dressing in a separate bowl by combining lemon juice, sea salt, olive oil, and fresh oregano.
Once pan is hot, place steak in pan and sizzling. Lightly season with sea salt, Cook on one side for 30 seconds to 1 minute until brown crust develops. Flip and cook other side for an additional 30 seconds, until a golden brown crust develops.
Let steak rest for a few minutes before slicing to allow juices to redistribute.
Top sliced steak over spinach salad. Drizzle lemon dressing over steak and spinach salad.
