Living in Italian: Escarole with Kalamata Olives

  • Olive OIl

  • Garlic

  • Sea Salt

  • Escarole

  • Lemon Juice

  • Red Pepper Flakes

  • Kalamata Olives (and juice)


  1. Heat pan over medium high heat, coat pan with olive oil. Add crushed garlic and heat in pan until aromatic.

  2. Roughly chop escarole and add to pan. Saute in pan. Season with salt, lemon juice and red pepper flakes.

  3. Pour in some juice from kalamata olives. Then roughly tear kalamata olives into pan. Lower heat to allow escarole to saute and absorb flavors until slightly wilted and tender.

  4. Serve and enjoy!
