Living in Italian: Spicy Escarole

Escarole is a classic Italian dark leafy green. Fiorella will show you how to spice it up with red pepper flakes and other Southern Italian staples!



  • Escarole, roughly chopped

  • Olive Oil

  • Scallions, chopped

  • Clam Juice

  • Sea Salt

  • Red Pepper Flakes



  1. Roughly chop washed escarole. Heat olive oil in pan over medium high heat. Add scallions to pan. Add clam juice to cover bottom of pan.

  2. Then add escarole to pan. Season with sea salt. Add red pepper flakes to taste.

  3. Quickly saute until escarole slightly wilted, but still green. 

  4. Serve and enjoy!
