Zucca (Pumpkin) with Roasted Pesto
As I always say, treat your veggies right, and they will treat you right! I'm adding a twist to my Aunt Grazziella's pumpkin recipe using one of my pantry staples! My Zucca with Pesto is a perfect dish to serve at any dinner or holiday party!

Ingredients:
Olive Oil
Garlic
Pumpkin, chopped
Sea Salt
Roasted Pesto, see recipe here
Whole Grain Bread (to serve)
Preparation:
Heat pan with olive oil over medium heat. Saute garlic in olive oil until fragrant.
Add pumpkin, and saute until tender. Add sea salt to taste.
Add 2-3 tablespoons of pesto into the pan. Stir until pumpkin lightly coated with pesto. Saute 2-3 minutes.
Serve as bruschetta on slices of whole grain bread. Enjoy!
