Zucca (Pumpkin) with Roasted Pesto

As I always say, treat your veggies right, and they will treat you right! I'm adding a twist to my Aunt Grazziella's pumpkin recipe using one of my pantry staples! My Zucca with Pesto is a perfect dish to serve at any dinner or holiday party!

Ingredients:

  • Olive Oil

  • Garlic

  • Pumpkin, chopped

  • Sea Salt

  • Roasted Pesto, see recipe here

  • Whole Grain Bread (to serve)

  •  

Preparation:

  1. Heat pan with olive oil over medium heat. Saute garlic in olive oil until fragrant.

  2. Add pumpkin, and saute until tender. Add sea salt to taste.

  3. Add 2-3 tablespoons of pesto into the pan. Stir until pumpkin lightly coated with pesto. Saute 2-3 minutes.

  4. Serve as bruschetta on slices of whole grain bread. Enjoy!
