Peasant Panzanella Salad
Ingredients:
Whole Grain Bread
Tomatoes
Basil
Red Onion
Lemon Juice
Feta Cheese
Olive Oil
Sicilian Tuna, optional
Preparation:
Dry out cubed, whole grain bread for two days, or use stale bread and cut into crouton-size pieces.
Chop tomatoes, dice red onion, and basil.
Add bread with vegetables in a large salad bowl. Squeeze lemon juice, drizzle in olive oil, add crumbled cheese, and flake in canned tuna (if using). Toss to combine.
Season accordingly with salt, pepper, and more lemon juice and olive oil if needed.
