Living in Italian: Panzanella Salad

Italians are well-known for their no-muss, no-fuss style of cooking. This salad is a perfect example! Using bread, fresh seasonal vegetables, and some Sicilian tuna to make it an entree, this panzanella salad is effortlessly Italian! Watch here!

 

Peasant Panzanella Salad

 

Ingredients:

  • Whole Grain Bread

  • Tomatoes

  • Basil

  • Red Onion

  • Lemon Juice

  • Feta Cheese

  • Olive Oil

  • Sicilian Tuna, optional

 

Preparation:

  1. Dry out cubed, whole grain bread for two days, or use stale bread and cut into crouton-size pieces.

  2. Chop tomatoes, dice red onion, and basil. 

  3. Add bread with vegetables in a large salad bowl. Squeeze lemon juice, drizzle in olive oil, add crumbled cheese, and flake in canned tuna (if using). Toss to combine.

  4. Season accordingly with salt, pepper, and more lemon juice and olive oil if needed.

  5. Enjoy!
