How to Cook a Perfect Steak in Your NYC Apt & in a Pan

Grilling is my favorite way to cook a steak but when you live in an NYC apartment in dead of Winter or in the Summer for that matter you better learn how to cook a steak in a pan. So after much practice with various cuts of meat this is what I have narrowed down. My favorite cuts are skirt steak, ribeye and filet mignon- but you can use this technique with any cut.

 

Directions for Cooking

The pan: non-stick, stainless steel or cast iron- all have to be set on high heat for at least two minutes before you smack the meat on it.  So you can use olive oil to slightly coat the pan but I used a few chunks of butter to coat the pan- about two teaspoons - the muster and the Maillard reaction collude to give me a great brown crust and a great flavor!

  •  Take out your steak and leave it at room temperature for a least 30 minutes, pat it dry of any surface moisture. Season it with salt and pepper generously - both sides.

  • To check if pan is hot enough drop a bit of water to see if it sizzles if it does go ahead and place it in the pan-listen to the wonderful sizzle- leave for about 2 minutes before you peak at the bottom for the brown crust- when it is gorgeous flip it over after 30 seconds- you can reduce heat a bit and let it cook to your fave temp. I like Rare so it just takes me two more minutes! Now cook one steak at a time because adding more meat may lower cooking temperature of pan and extra moisture may broil the meat and prevent brown crust. 

  • Let it rest for a few minutes

 To accompany this Luscious Steak

  • Add some wonderful veggies with this steak, perhaps dressed in a low fat caesar dressing and a sprinkle of Parmigiano Reggiano.

  • This time I made a simple arugula salad with fresh lemon juice and extra virgin olive oil and sea salt and red onion- Italian style.
