Fiorella was inspired by her recent trip to Italy to make this traditional Italian vegetable side dish! Perfect way to use seasonal winter vegetables like the eggplant which is filled with nutrients and delicious! 

 

Eggplant Nutrition RX:

Fiber

B Vitamins

Phytonutrients

 

Tomato Nutrition RX:

Vitamin C

Vitamin A

Lycopene

 

  • Slice eggplant and tomatoes into ½ inch thick slices.

  • Put on sheet pan, drizzle with olive oil and sea salt and roast in oven at 350F.

  • Then cut eggplant and tomatoes into cubes, heat in sauce pan with olive oil, sea salt, pepper and capers. Garnish with basil and serve.

 

How to Serve:

  • Side Dish

  • Crostini

  • Main Course with Ground Turkey, Italian Sausage or Tuna.
