5 Fresh Ways to Eat Your Vegetables This Summer!
The summer is the perfect time to enjoy fresh ingredients in the sun and increase your veggie intake. However, it doesn’t take much time to get sick of eating the same grilled vegetables at every barbeque. Keep reading for some fresh ideas to mix up your veggies!
Mexican Corn: For a variety on the standard summer corn with butter and salt, we recommend you try your hand at making Mexican corn, which is often covered with a mix of mayonnaise, cheese and spices. Find your favorite recipe this weekend to spice up your night!
Zucchini Pasta: Although Zucchini is delicious fresh off the grill; we think it might be even better served as pasta. Run your zucchini through the spiralizer, sprinkle with salt, and let sit for ten minutes. Next, rinse the salt, and throw the “spaghetti” in a pan with some garlic and oil. When it’s finished, top with fresh tomato sauce, or experiment with new flavors- maybe pesto!
Sweet Potato Fries: Although everyone loves a good baked potato, we strongly recommend you try out sweet potato fries. All you have to do is peel and slice your potatoes, toss in oil and spices of your choice and place in the oven. They are so easy and delicious; they’re sure to become your new staple.
Cauliflower Fried Rice: For another way to sneak in some extra veggies, try out some cauliflower rice! All you need is a head of cauliflower and a food processor- it really is that easy. Again, there are many recipes available online, so look one up and give it a shot!
Babaganoush: Babaganoush is a cold dip made from eggplant and often served with pita bread- and it is delicious! It’s also super easy to make and helps you get your veggies in for the day. All you have to do is grill an eggplant until the middle is soft, then scrape out and blend with olive oil, lemon juice, salt and garlic, or experiment with spices of your choice. This dish is sure to be a hit at your next BBQ.
