The Moms of FiorellaEats

Fiorella DiCarlo, RD, CDN

My mother is Carina Chiacchio who never let us forget she was the prettiest girl in her Italian village, raised five girls and makes the best meatballs ever! Her Mother's Day food wish is a Steak and chocolate-that's where I get it from! That's me with her in that pic!

My mother is Isabel Serrano Ismael. What can  I say... She's the best mom anyone could ask for her. Got her Masters Degree in Psychology and became a Social Worker while being a full time wife and raising my brother and I. Her Mother's Day food request is French cuisine which is her favorite... And anything creamy!

My mother is Marilou Santos,  by far the strongest and most self-less woman I know! My mom is the greatest: came to the US by herself as a nurse (30+ years service!) from the Philippines, brought over my dad & her parents, and raised my two sisters and I! No one can touch her fried chicken or pancit!  For Mother's Day I make her childhood favorite: pineapple upside down cake, with a maraschino cherry! (or new favorites chocolate cake with chocolate frosting or crepes!)

Here is my mother and I back in the early 90s, in our always-matching outfits. Her favorite food in traditional Greek style is tiropita, a ricotta and feta filled fillo pie.

My mom, Kristine, is the silliest and most loving woman I know, and also happens to make the best pierogis in the world! Her Mother's Day meal of choice is lasagna. She is amazing because she is completely selfless and will do anything for anyone without judgement.

My mother instilled in me the value of good nutrition from food which was a driving force in my choice of career.   My mother's ideal choice for a Mother's Day meal is multicolored peppers stuffed with quinoa, feta cheese and fresh herbs such as basil, dill, oregano and thyme, a Mediterranean salad, crusty French bread and a glass of red wine. For dessert, her latest favorite is coconut chia pudding topped with mango, toasted coconut and almonds.
