Ireland may not have a reputation for food but that is about to change. The country has a growing list of innovative young chefs and long standing artisans that are preserving and producing food with age old techniques.
The Refinery Rooftop at the Refinery Hotel was where the elegant tasting took place. Kerrygold which has been a long time favorite for me has an amazing Aged Cheddar and Butter as well as Cashel Blue. We had the pleasure of tasting all the their products among others in recipes developed by Imen McDonnell and her new book Modern Farmette. She chronicles traditional Irish skills in food production and recipes in her book and she encapsulates the spirit of the event- check out her recipe for Irish Farmer Cheese here!
