Healthy Panini

There is nothing better in this weather than a perfectly crunchy Panini, particularly when you use crunchy bread (Check out my Top Bread here!) & eat it along some savory soups (Check out my Top Soups here)! Make these Healthy Panini anytime!  

 

 

Mortadella & Pistachio Pesto Panini

Olive Loaf, sliced in half and toasted

Pistachio Pesto (recipe here!

Mortadella

Olive Oil

Lemon Juice

 

Drizzle olive oil onto bread and toast bread in 350F oven for 2-3 minutes. Spread pistachio pesto onto slice, then fluff 2 slices of mortadella, drizzle olive oil and a squeeze of lemon.

 

 

Prosciutto & Ceci Spread Panini

 

Olive Loaf

Ceci Spread

Prosciutto

Lemon Juice

 

Spread ceci spread onto bread, then 2 slices of prosciutto, and a squeeze of lemon. Slice and serve!
