Radish Cole Slaw (recipe below)

Healthy, shmealthy! Thanksgiving sides are supposed to be delicious, hearty and feel like home. With these recipes you can have both! Using seasonal foods and great condiments, dressings and fresh ingredients they will everyone healthy and happy!

 

Radish Cole Slaw

 

  • 2 cups Cabbage, white or purple (shredded)

  • 2 radishes (sliced)

Dressing:

  • 1/2 Avocado

  • 3 Tbs 2% Greek Yogurt

  • Sea Salt

  • Squeeze of Lemon

  • Chop Dill

 

Mix cole slaw and radishes with dip

 

 

 

Roasted Vegetables

 

  • Cauliflower, Brussel Sprouts, Sweet Potato (cut into pieces about the same size)

  • Extra virgin olive oil

  • Sea salt

  • Squeeze of lemon

  • Sprinkle Parmigiano Reggiano

 

Cook at 400 degrees in oven for 15-20 min

Can be kept in Fridge for one week

 

Wild Rice & Quinoa Medley

 

  • Quinoa and Wild Rice Mix (cook separately and fluff)

  • Pecans, Walnuts and Almonds or nuts of your choice

Dressing:

  • Extra Virgin Olive oil

  • Squeeze of lemon

  • Sea Salt

 

Toast nuts in oven with olive oil and sea salt on 350 degrees for 3 minutes. (For slightly sweet flavor add brown sugar to toasted nuts before toasting)

Toss together and serve.

 

Fiorella's Roasted Pistachio Pesto with Ricotta Crostini

 

  • 2 Large Bunches of Fresh Basil

  • Extra Virgin Olive oil (about one cup) pour slowly and taste as you go

  • 1/2 cup of Roasted Pistachio nuts

  • 2 Tbs of Cashew nuts

  • 1 whole lemon squeezed

  • 1/2 cup Parmigiano Reggiano

  • 1 tsp of grated garlic

  • salt to taste

  • Crusty Baguette, sliced 

  • Fresh Ricotta

 

Blend basil, oil, nuts, cheese, garlic, and lemon juice in food processor. Spread fresh ricotta then a dollop of pesto on each slice of bread.
