The Green Space is presenting a food series called Lopate and Locavores, a series about the local NYC food scene. Last Wednesday evening I attended the Building a Restaurant Empire panel featuring Lidia Bastianich, David Bouley and Andrew Carmellini. They discussed their adventures as restauranteurs. As a huge fan of Lidia and with her usual charm she proved what I already suspected: that she built her empire through true hard work. David Bouley colorfully spoke of his ideas behind his restaurant and his new nutrition focused fare as well as the idea behind Bouley Botanical (an urban farm event space). Andrew Carmellini (Bar Primi) divulged that he would have loved to produce a music album if he had not become a chef.
To close the evening, Mr. Lou Di Palo (yes the same Lou Di Palo from DiPalo Selects, watch our video here!) who just recently released his book Di Palo's Guide to the Essential Foods of Italy: 100 Years of Wisdom and Stories from Behind the Counter made fresh Fior di Latte Mozzarella on stage and explained to the audience the influence of the season in making Parmigiano Reggiano-his advice: choose Spring-it is more complex.
